When smoking a brisket, choose the flat and try to choose one with at least one inch thickness at the thinnest point of the brisket. This will allow you to have a more even cooking of the meat. When it’s thinner, the thinnest section will have a tendency to be dry and overcooked.

Are Costco Briskets Good For Smoking?

Costco brisket is a prime grade of meat. This means that they have some marbling in the meat and will allow for a better quality texture.

The marbling will render some awesome juice that will help keep your brisket tender. Briskets that have less marbling have a tendency to be drier and could also be tough and hard to eat.

Picking The Best Flat To Smoke

When shopping for your brisket, select a brisket that has the thickest flat and that is the most uniform. A brisket that tapers off can be dry and that part of the brisket can end up being a waste.

Choosing a brisket that is prime is going to be your best choice. Prime offers more marbling, which offers more juice to help keep your brisket tender while it cooks. Since brisket cooks slowly and for a long period of time, the marbling will help it to stay tender and juicy.

Why Would You Smoke Just A Brisket Flat?

Smoking a brisket flat is the best way to cook a brisket. Since brisket tends to be a tougher cut of meat, slow cooking it will help it to be tender as well as juicy.

Smoking a brisket can take up to 15 hours in order for you to have the best flavor, texture and tenderness that you desire.

Should You Just Smoke A Brisket Flat?

While smoking a brisket will give you a great flavor and texture, if done correctly, you can also choose to cook your brisket in your kitchen oven if you’d like. If you choose the oven, you will not have the smokey flavor that so many brisket lovers long for.

Whether you choose the oven or the smoker, a brisket will take a few hours to cook. It takes time for the meat to become tender and slow when cooking, it will help you to have a tender brisket that can melt in your mouth.

Smoking Costco Brisket Flat Cap Up or Cap Down?

When smoking your Costco brisket flat, you will want to make sure the flat cap is down. This will allow you to easily spritz the meat side when it’s up.

Also, with the fat side down, the fat will not stick to your grating the way that the meat would if you cooked it with the fat side up. With the fat side down, this will also help to protect your meat from the heat.

Smoking Costco Brisket Flat Done Temperature

When your brisket reaches a temperature of 200 degrees internally, it is done. A fork should be able to easily be inserted and removed from the meat.

You can use a meat thermometer to make sure that your brisket has reached 200 degrees. Once it has reached this temperature, you will want to let your brisket rest on the counter for at least an hour. This will allow your brisket to hold in the juices and it will also make it easier to slice.

When To Pull From The Smoker

Once your brisket has reached a temperature of 200 degrees, you can pull it from your smoker. Letting it rest before cutting and serving will help you have a juicy meat and also to slice it easily.

Simply place it on our counter for about an hour uncovered. This time will allow the juices to remain in the meat. If you cut it too quickly, your meat will lose its juices and can be dry.

Smoking Costco Brisket Flat Hot And Fast

Smoking hot and fast is not recommended for brisket. The brisket is a tough cut of meat and slow cooking on a low heat will help it to cook to a very tender stage.

It can take up to 15 hours to smoke a brisket and a temperature of 225 is just about perfect. Hot and fast can ruin your brisket and make it a waste of time and money.

Smoking Costco Brisket Flat And Point Separately

The point will help to protect the flat from the heat that you are smoking it on. The juices from the point will help to keep the flat juicy and tender.

Trimming some of the fat off of the point, will allow the meat to cook more evenly. This will also allow the meat to absorb the smokey flavor.
