How long to smoke an 11 pound brisket
If you are wondering how long to smoke an 11 pound brisket, then you have certainly come to the right place.
First of all, take a quick note of how hot in temperature you are planning on smoking it at.
The most common range to smoke any brisket of any weight is between 225°F to 320°F.
At the lower end of the spectrum, that is known as low and slow. At the upper end of the temperature range, you can call that hot and fast.
Cooking an 11 pound brisket low and slow would mean that you are smoking it at around 225°F to 250°F. That would take approximately 11 hours to fully cook through and render all the collagen and connected tissues within the entire brisket packer.
That’s simply because at the lower temperatures, the cook the rate is about 1 pound per hour.
Likewise, smoking briskets at temperature ranges hotter than 275°F, would be considered hot and fast.
Hot and fast cooks have a cook the rate of about 2 pounds per hour, give or take.
That means the same 11 pound brisket that was smoked at 225°F, would now only take about half as long because the temperature is quite a bit more.
Specifically, at a 2 pound per hour cook through rate, an 11 pound brisket should take about 6 to 7 hours to fully cook through assuming the temperature is very hot of course.
Depending on how hot and fast or low and slow you are smoking your brisket at, know that at 225°F, you should have a cook the rate of about 1 pound per hour.
At 275°F or hotter, then you should expect around a 2 pound per hour cook through rate.
That means an 11 pound brisket should take anywhere from 11 hours to 6 or 7 hours to fully cook through depending on how hot or how low you cook it.
