If you’re wondering how long you should be smoking a 5 pound brisket on a pellet smoker, then you’re at the right place!

On average, most briskets will take about 5 hours or so to fully cook through.

That is the time it should take for the piece of meat of fully render down the collagen within the meat.

That does of course assume that you are smoking it at anywhere from 200°F to about 300°F.

Those two temperature ranges are among the most popular to begin smoking any piece of barbecue with.

For the lower end of the range, expect about 1 pound per hour of cook time and with the higher end of the spectrum, expect closer to about 2 pound per hour of cook time.

How do you cook a 5 pound brisket on a pellet grill?

Cooking a 5 pound brisket on a pellet grill can be done by simply just seasoning it properly, and throwing it onto the pellet grill at a reasonable temperature. 

To get started, you’ll want to begin preparing your pellet grill to get to the correct temperature that you want to be at. 

It should take about one hour to get to the temperature, so it’s a good idea to get it going first before you start season your meat.

You want to be as efficient as possible.

Once you’ve actually started the cooking process on your pellet grill, summer season your 5 pound brisket.

Liberally apply kosher salt and black pepper.

Make sure there’s no blotches are any open spots because brisket requires tons of seasoning.

So don’t hold back.

Once the brisket is seasoned and your pellet grill has come up to anywhere between 200°F and 300°F, all you have to do is simply throw it onto the smoker. 

Let it cook all the way through to an internal temperature of about 200°F. 

At that point, you’ll want to grab a toothpick and test for any resistance at all.

Once there is no resistance and it is temping out at the right temperature, then you can pull out the smoker and let it rest.

You don’t have to sit around for about five hours to let it cook through at a low temperature of 225°F.

As mentioned earlier, you can cook it a lot faster which would mean that it could be done in about half that time. 

If you were to smoke it at 300°F, then you could rest assured that the brisket can be at the done temperature in only 2 1/2 hours. 

So whether or not you should do that is really up to you, but it is something I personally would recommend that you should consider.
